You can use any one or two vegetables (no more) for sambar. But the time you add them with the simmering daal (paruppu) varies. Because, each vegetable has different cooking times. Cooking it with dal right from the beginning will very likely overcook the vegetables. Cooking the vegetables seperately will not let the flavours mix properly.
Overall cooking time is between 25 and 30 minutes. The dal is always heated first and then the vegetables are added.
small egg plants/ brinjal - after 12 minutes
chow chow (chayote) - after 12 minutes
drumsticks (murungakka) - after 6 minutes
brussel sprouts - after 12 minutes
radish - after 8 minutes
