5 1/2 cups sifted cake flour
4 1/2 tsp. baking powder
1 1/2 cups butter
2 1/4 cup sifted granulated sugar
4 large eggs
1 tsp. lemon zest
1/2 tsp. vanilla
1 cup plus 2 tbsp. milk
Vegetable food coloring
Grease a 10-inch tube pan and dust it with flour. Preheat oven to 325 degrees. In a bowl, sift flour and baking powder together. In a separate bowl, cream the butter for 3 minutes with a mixer. Add sugar, gradually, and beat another minute. Add eggs one at a time, beating in well after each addition. Mixture should be thick. Add zest and vanilla. Alternately add milk and flour and baking powder mixture. Beat only until smooth.
Divide batter into three portions. Beat a few drops of green coloring into one, yellow into another, red into the third. Pour pink (red) batter into the tube pan first; spread carefully. Then spread in green, followed by yellow. Bake in a 325-degree oven for 45 minutes. Increase temperature to 375 degrees and bake 15 more minutes. Use cake tester to determine if cake is done.
Remove from oven and let cake rest in pan for 15 minutes. Loosen around the edges and turn out onto a cake rack. Serve sliced, sprinkled with confectioners' sugar.
